Instructions

1. Begin by boiling water in a pot. Once boiling, gently add the eggs and cook for 8-10 minutes for hard-boiled eggs. Remove and cool under cold water.

2. While the eggs are cooking, toast the Ezekiel bread slices until golden brown.

3. Cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Mash with a fork and season with salt, pepper, and a squeeze of lemon juice if desired.

4. Once the eggs are cool, peel them and slice them in half.

5. Spread the mashed avocado evenly over the toasted bread slices.

6. Top each slice with the halved eggs and sprinkle with additional salt, pepper, and red pepper flakes if desired.
