Instructions
1.
1. Toast the sourdough bread slices until golden brown (about 3-4 minutes).

2. While the bread is toasting, heat a non-stick skillet over medium heat and cook the eggs to your liking (sunny-side up or scrambled) for about 4-5 minutes.

3. In a bowl, mash the avocados with a fork and season with salt and pepper.

4. Spread the mashed avocado evenly on each slice of toasted bread.

5. Top each slice with a cooked egg, a dollop of cottage cheese, and halved cherry tomatoes.

6. Garnish with fresh herbs and additional salt and pepper if desired.
