Instructions
1.
1. Toast the slices of Dave's Killer Bread until golden brown (about 3-4 minutes).

2. While the bread is toasting, heat a non-stick skillet over medium heat and spray with olive oil if desired.

3. In a bowl, whisk together the eggs and egg whites, then season with salt and pepper.

4. Pour the egg mixture into the skillet and add the chopped spinach and diced green bell pepper.

5. Cook for about 3-4 minutes, stirring occasionally, until the eggs are fully cooked.

6. Meanwhile, mash the avocado in a bowl and season with salt and pepper.

7. Once the toast is ready, spread the mashed avocado evenly on each slice.

8. Top each slice with the cooked egg mixture, followed by a dollop of cottage cheese and diced Roma tomato.
9.
9. Serve immediately and enjoy your healthy breakfast!
