Started today out strong! Woke up and drank some water and now Im having a Poche on toast with pepper flakes and some grapes for breakfast. Its been a rough last couple of days wanna go into the weekend strong.

Instructions

  • 1.

    1. Begin by toasting the whole grain bread slices until golden brown (about 3-4 minutes).

  • 2.

    2. While the bread is toasting, bring a pot of water to a gentle simmer. Add a splash of vinegar to help the eggs hold their shape.

  • 3.

    3. Crack each egg into a small bowl, then gently slide them into the simmering water. Poach for about 3-4 minutes for a runny yolk or longer for a firmer yolk.

  • 4.

    4. While the eggs are cooking, mash the ripe avocados in a bowl and season with salt and black pepper to taste.

  • 5.

    5. Once the eggs are done, carefully remove them with a slotted spoon and let them drain on a paper towel.

  • 6.

    6. Spread the mashed avocado evenly on each slice of toasted bread.

  • 7.

    7. Top each slice with a poached egg, sprinkle with red pepper flakes, and additional black pepper if desired.

  • 8.

    8. Serve with fresh grapes on the side for a refreshing touch.
