Protein pancake. Egg spinach and turkey sausage scrambled.

Instructions

  • 1.

    In a blender, combine rolled oats, protein powder, mashed banana, eggs, almond milk, baking powder, cinnamon, and salt. Blend until smooth (about 1-2 minutes).

  • 2.

    In a non-stick skillet over medium heat, pour 1/4 cup of the pancake batter for each pancake. Cook for 2-3 minutes on one side until bubbles form, then flip and cook for another 1-2 minutes until golden brown.

  • 3.

    In another skillet, cook the crumbled turkey sausage over medium heat until browned (about 5 minutes). Add chopped spinach and cook until wilted (about 2 minutes).

  • 4.

    Serve the pancakes warm with the egg and sausage scramble on the side.

    1 ripe banana, mashed

    2 large eggs

    1 tsp baking powder

    1/2 tsp cinnamon

  • 8.

    Salt to taste

    1 cup fresh spinach, chopped

  • 10.

    4 oz turkey sausage, crumbled
