Instructions

  • 1.

    In a blender, combine rolled oats, almond flour, protein powder, cottage cheese, egg whites, cinnamon, and vanilla extract. Blend until smooth (about 1-2 minutes).

    Preheat a non-stick skillet over medium heat and lightly grease with cooking spray or a small amount of oil.

  • 3.

    Pour 1/4 cup of the batter onto the skillet for each pancake. Cook for 2-3 minutes or until bubbles form on the surface.

  • 4.

    Flip the pancakes and cook for another 2-3 minutes until golden brown.

  • 5.

    Serve warm, topped with fresh blueberries.
