Great call going with the protein rich pancakes! Since youre so close to hitting your weekly target Im curious to know when youre planning to have your next high-protein breakfast Lets keep the momentum going and finish the week strong!

Instructions

  • 1.

    In a blender, combine rolled oats, protein powder, baking powder, cinnamon, egg whites, almond milk, and vanilla extract. Blend until smooth (about 1-2 minutes).

  • 2.

    Preheat a non-stick skillet over medium heat and lightly grease with cooking spray or coconut oil.

  • 3.

    Pour 1/4 cup of the pancake batter onto the skillet for each pancake. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.

  • 4.

    Repeat with the remaining batter, adjusting the heat as necessary to prevent burning.

  • 5.

    Serve warm with sugar-free syrup or fresh fruit.
