Instructions

    In a blender, combine rolled oats, protein powder, eggs, almond milk, baking powder, cinnamon, and salt. Blend until smooth (about 1-2 minutes).

    Heat a non-stick skillet over medium heat and lightly grease with cooking spray or coconut oil.

  • 3.

    Pour 1/4 cup of the batter onto the skillet for each pancake. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.

  • 4.

    Repeat with the remaining batter, adjusting the heat as necessary to prevent burning.

  • 5.

    Serve warm with your choice of toppings, such as fresh fruit, yogurt, or a drizzle of honey.
