Instructions
1.
In a large bowl, combine rolled oats, protein powder, almond flour, and chia seeds.
2.
In another bowl, whisk together egg whites and almond milk until well combined.
3.
Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in dried cranberries and blueberries.
4.
Heat a non-stick skillet over medium heat and lightly grease with cooking spray or a small amount of oil.
5.
Pour 1/4 cup of the batter onto the skillet for each pancake. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 2-3 minutes until golden brown.
6.
Repeat with the remaining batter, adjusting the heat as necessary to prevent burning.
7.
Serve warm, drizzled with a little maple syrup if desired.
