Today I had protein flaxseed and chocolate chip pancakes and two eggs for breakfast. It was a bigger breakfast than Im used to and I ate in later in the morning so I think it should tide me over until dinner. I was proud of myself for being mindful of portion sizes and also thinking to sprinkle flax seeds on the pancakes along with a couple of chocolate chips. It was a great way to start the day I feel full and it was delicious! Also proud of myself for still eating in alignment with my goals even on a weekend.

Instructions

  • 1.

    In a blender, combine rolled oats, protein powder, ground flaxseed, baking powder, cinnamon, almond milk, and eggs. Blend until smooth (about 1-2 minutes).

    Let the batter sit for 5 minutes to thicken.

  • 3.

    Preheat a non-stick skillet over medium heat and lightly grease with cooking spray or coconut oil.

  • 4.

    Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface (about 2-3 minutes), then flip and cook for another 2-3 minutes until golden brown.

  • 5.

    Repeat with the remaining batter, adjusting the heat as necessary to prevent burning.

  • 6.

    Serve warm, topped with a sprinkle of flaxseed and a few chocolate chips if desired.
