Instructions

1. Preheat a large skillet over medium heat. If desired, spray with olive oil.

2. Add the diced sweet potatoes and cook for about 10 minutes, stirring occasionally, until they start to soften.

3. Add the turkey sausage to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 5-7 minutes.

4. Stir in the diced yellow bell pepper and spinach, cooking until the spinach wilts, about 2-3 minutes.

5. In a separate bowl, whisk together the eggs and egg whites. Pour the mixture into the skillet, stirring gently to combine with the other ingredients.

6. Cook until the eggs are set, about 3-5 minutes. Remove from heat and stir in the feta cheese.

7. Season with salt and pepper to taste, and serve warm.
