Your breakfast choice is a great example of incorporating lean proteins into your meal. The egg and egg whites are excellent sources of protein and the gluten-free bagel provides some necessary carbs. Instructions

  • 1.

    In a non-stick skillet, heat olive oil over medium heat (if using).

  • 2.

    Whisk together the eggs and egg whites in a bowl, adding salt and pepper to taste.

  • 3.

    Pour the egg mixture into the skillet and cook, stirring gently, until the eggs are fully cooked (about 5 minutes).

    Add fresh spinach to the skillet and cook until wilted (about 2 minutes).

  • 5.

    Slice the gluten-free bagels in half and toast them lightly.

    Assemble the burrito by placing the egg and spinach mixture on the bagel halves.
