Had quite a few eggs in the fridge so boiled them up to make breakfast and a stash of boiled eggs as a protein snack for over the weekend :)

Youre halfway through your weekly target of having four protein-rich breakfasts. Boiling up a batch of eggs for breakfast and as a protein snack is a smart move. The fact that youre making use of whats available in your fridge is also commendable. Its a good practice to keep a stash of healthy snacks handy for when hunger strikes

Instructions

  • 1.

    Boil the eggs: Place eggs in a pot, cover with water, and bring to a boil. Once boiling, cover and remove from heat. Let sit for 10-12 minutes, then cool in cold water.

  • 2.

    Toast the bread: While the eggs are boiling, toast the whole grain bread until golden brown.

  • 3.

    Prepare the spread: If using, mix the low-fat spread with a pinch of salt and pepper.

  • 4.

    Assemble the burrito: Slice the boiled eggs in half and place them on the toasted bread. Spread the low-fat spread on the bread, and add fresh spinach if desired.

  • 5.

    Serve: Enjoy your healthy breakfast burrito warm, and feel free to add any additional toppings you like!
