Instructions

  • 1.

    Preheat your oven to 350°F (175°C).

  • 2.

    In a skillet, heat olive oil over medium heat. Add onions and sauté until translucent, about 3-4 minutes.

    Add mushrooms and broccoli to the skillet, cooking until tender, about 5-7 minutes. Season with salt and pepper.

  • 4.

    In a bowl, whisk together eggs and milk until well combined. Stir in the sautéed vegetables.

  • 5.

    Pour the mixture into a greased pie dish. If using, sprinkle cheese on top.

  • 6.

    Bake for 25-30 minutes, or until the quiche is set and lightly golden on top.

    Let it cool for a few minutes before slicing and serving.
