Instructions
1.
1. In a non-stick skillet, scramble the eggs over medium heat until fully cooked, about 3-4 minutes.

2. While the eggs are cooking, toast the whole grain bread until golden brown.

3. On a plate, layer the sliced tomatoes and mozzarella cheese, drizzling with balsamic glaze.

4. Add a generous handful of arugula and microgreens on the side.

5. Serve the scrambled eggs alongside the Caprese salad and toast.
