Chorizo egg muffins

Your chorizo egg muffins sound absolutely delicious! Eggs are a wonderful source of lean protein that will help keep you satiated until your next meal. The portion size seems just right which is excellent. Well done Leah!

Instructions

  • 1.

    Preheat your oven to 350°F (175°C).

  • 2.

    Grease a muffin tin with cooking spray or a light drizzle of olive oil.

  • 3.

    In a large bowl, whisk together the eggs, salt, and pepper.

  • 4.

    Stir in the cooked chorizo, diced bell peppers, chopped spinach, and cheese (if using).

  • 5.

    Pour the egg mixture evenly into the muffin tin, filling each cup about 3/4 full.

  • 6.

    Bake for 18-20 minutes, or until the muffins are set and lightly golden on top.

  • 7.

    Allow to cool for a few minutes before removing from the tin. Serve warm or store in the refrigerator for later.

    Salt and pepper to taste
