Instructions
1.
1. In a non-stick skillet, spray a little olive oil and heat over medium heat.

2. Add the chopped onions and bell peppers, sautéing for about 3-4 minutes until softened.

3. Stir in the cauliflower and cook for another 2-3 minutes until tender.

4. In a bowl, whisk together the eggs and egg whites, adding salt and pepper to taste.

5. Pour the egg mixture into the skillet with the vegetables, stirring gently until the eggs are fully cooked, about 3-4 minutes.

6. While the eggs are cooking, toast the whole grain seed bread until golden brown.
7.
7. Serve the scrambled eggs alongside the toast.
