Good morning Emily and a great start to the day! -youre now just one step away from reaching your weekly target of incorporating a protein-rich breakfast into your routine. The egg bites are a fantastic choice packed with protein to keep you feeling full and energized

Instructions

  • 1.

    Preheat your oven to 350°F (175°C).

  • 2.

    In a mixing bowl, whisk together the eggs, cottage cheese, salt, and pepper until well combined.

  • 3.

    Stir in the diced bell peppers and chopped spinach.

  • 4.

    Grease a muffin tin with cooking spray or olive oil.

  • 5.

    Pour the egg mixture evenly into the muffin tin, filling each cup about 3/4 full.

  • 6.

    If using, sprinkle shredded cheese on top of each egg bite.

  • 7.

    Bake in the preheated oven for 20 minutes, or until the egg bites are set and lightly golden.

  • 8.

    Allow to cool for a few minutes before removing from the muffin tin. Serve warm or store in the refrigerator for meal prep.
