Instructions
1.
Preheat your oven to 350°F (175°C).
2.
In a mixing bowl, whisk together the eggs, salt, and pepper until well combined.
3.
Stir in the chopped spinach and half of the cheddar cheese.
4.
Grease a muffin tin with cooking spray or olive oil.
5.
Pour the egg mixture evenly into the muffin tin, filling each cup about 3/4 full.
6.
Top each cup with a spoonful of salsa and the remaining cheddar cheese.
7.
Bake in the preheated oven for 15-20 minutes, or until the egg is set and the tops are golden.
8.
Allow to cool slightly before removing from the muffin tin. Serve warm.
