Instructions

  • 1.

    Preheat your oven to 350°F (175°C).

  • 2.

    In a large bowl, whisk together the eggs, salt, and pepper until well combined.

  • 3.

    Stir in the diced bell peppers, chopped spinach, and onions.

  • 4.

    Grease a muffin tin with cooking spray or olive oil.

  • 5.

    Pour the egg mixture evenly into the muffin tin, filling each cup about 3/4 full.

  • 6.

    If using, sprinkle cheese on top of each cup.

  • 7.

    Bake for 15-20 minutes, or until the egg is set and lightly golden.

  • 8.

    Allow to cool for a few minutes before removing from the tin.
