Instructions
1.
Preheat your oven to 350°F (175°C).
2.
In a large bowl, whisk together the eggs, salt, and pepper.
3.
Stir in the chopped spinach, bell peppers, and onion until well combined.
4.
Grease a muffin tin with cooking spray or line with muffin liners.
5.
Pour the egg mixture evenly into the muffin tin, filling each cup about 3/4 full.
6.
If using, sprinkle cheese on top of each muffin.
7.
Bake for 15-20 minutes, or until the muffins are set and lightly golden.
8.
Let cool for a few minutes before removing from the tin.
9.
Serve warm with sliced pear and banana on the side.
