Instructions
1.
Preheat your oven to 350°F (175°C).

In a non-stick skillet, lightly spray with cooking spray and cook the turkey sausage patties over medium heat until browned and cooked through (about 5-7 minutes). Remove and set aside.

In the same skillet, add the egg whites and season with salt and pepper. Cook until set, stirring occasionally (about 3-4 minutes). If using spinach, add it in the last minute of cooking to wilt.
4.
While the eggs are cooking, toast the whole grain English muffins until golden brown.
5.
Assemble the muffins: Place a turkey sausage patty on the bottom half of each muffin, top with cooked egg whites (and spinach if using), and cover with the top half of the muffin.
6.
Serve warm and enjoy your healthy egg muffin!
