Instructions
1.
Preheat your oven to 350°F (175°C).

In a large bowl, whisk together the eggs, salt, and pepper until well combined.

Stir in the chopped spinach, diced tomatoes, and cooked turkey sausage.
4.
Grease a muffin tin with cooking spray or olive oil.
5.
Pour the egg mixture evenly into the muffin tin, filling each cup about 3/4 full.
6.
Top each muffin with a spoonful of shredded hash browns.
7.
Bake in the preheated oven for 18-20 minutes, or until the muffins are set and lightly golden.
8.
Allow to cool for a few minutes before removing from the tin. Serve warm or store in the refrigerator for meal prep.
