Instructions

  • 1.

    Preheat your oven to 350°F (175°C).

  • 2.

    Grease a muffin tin with cooking spray or a light drizzle of olive oil.

  • 3.

    In a mixing bowl, whisk together the egg whites, salt, and pepper.

  • 4.

    Fold in the chopped asparagus, low-fat feta, and lox until evenly distributed.

  • 5.

    Pour the mixture into the prepared muffin tin, filling each cup about 3/4 full.

  • 6.

    Bake for 15-20 minutes, or until the egg muffins are set and lightly golden on top.

  • 7.

    Allow to cool for a few minutes before removing from the tin. Serve warm or store in the refrigerator for later.
