Instructions
1.
Preheat your oven to 350°F (175°C).
2.
In a mixing bowl, whisk together the egg whites, salt, and pepper until well combined.
3.
Stir in the diced bell peppers, chopped spinach, and cottage cheese.
4.
Lightly grease a muffin tin with cooking spray or olive oil.
5.
Pour the egg mixture evenly into the muffin tin, filling each cup about 3/4 full.
6.
If using, sprinkle shredded cheese on top of each cup.
7.
Bake in the preheated oven for 15-20 minutes, or until the egg bites are set and lightly golden.
8.
Allow to cool for a few minutes before removing from the muffin tin.

1/2 cup diced bell peppers (red, green, or yellow)
3.
1/4 cup chopped spinach
4.
1/4 cup low-fat cottage cheese
5.
1/4 cup shredded low-fat cheese (optional)

Cooking spray or olive oil for greasing
