Instructions
1.
Preheat your oven to 350°F (175°C).
2.
In a mixing bowl, whisk the egg whites until frothy.
3.
Stir in the low-fat cheese, roasted red peppers, spinach (if using), salt, and pepper.
4.
Grease a muffin tin with cooking spray or olive oil.
5.
Pour the egg mixture evenly into the muffin tin, filling each cup about 3/4 full.
6.
Bake for 20 minutes or until the egg bites are set and lightly golden on top.
7.
Allow to cool for a few minutes before removing from the tin.

1/2 cup roasted red peppers, diced
4.
1/4 cup spinach, chopped (optional for added fiber)
