Instructions
1.
1. In a bowl, whisk the egg whites until frothy. Season with salt and pepper.

2. Heat a non-stick skillet over medium heat and lightly coat with cooking spray or olive oil.

3. Sauté the onions, bell peppers, and mushrooms for about 3-4 minutes until softened.

4. Add the spinach and tomatoes, cooking for an additional 2 minutes until the spinach wilts.

5. Pour the whisked egg whites over the vegetables and sprinkle the chopped ham on top.

6. Cook for 5-7 minutes, gently lifting the edges to allow uncooked egg to flow underneath.

7. Once the omelette is set, fold it in half and serve immediately.
