I made an egg egg white cottage cheese ham & veggie scramble with a little bit of olive oil.

Instructions

  • 1.

    Heat olive oil in a non-stick skillet over medium heat (about 2 minutes).

  • 2.

    Add diced onion and sauté until translucent (about 3 minutes).

  • 3.

    Stir in the diced ham and cook for another 2 minutes until heated through.

  • 4.

    Add the chopped spinach and diced tomato, cooking until the spinach wilts (about 2 minutes).

  • 5.

    Pour in the egg whites and cottage cheese, stirring gently to combine. Cook until the egg whites are set (about 3-4 minutes).

  • 6.

    Season with salt and pepper to taste, and serve warm.
