This morning I had a yogurt cottage cheese fruit crushed walnuts a dollop of sunflower butter drizzled with honey. Parfait. Yeah thats quite a mouthful. But anyhow that is what I had today. Im so grateful that I could return to a slower morning sit and mindfully enjoy my breakfast. The combination of flavors and textures especially with the fruit was absolutely delightful. In terms of portions I had a quarter cup Greek yogurt quarter cup cottage cheese a couple strawberries a few blueberries a quarter peach half a banana. So it was actually quite the works. It was absolutely delicious. It was all sorts of bursts of flavors and tastes and textures. Absolutely delicious.

Instructions

  • 1.

    In a medium bowl, combine the Greek yogurt and cottage cheese until smooth. (2 minutes)

  • 2.

    Layer the yogurt mixture in serving glasses or bowls, starting with a layer of yogurt. (2 minutes)

  • 3.

    Add a layer of mixed fresh fruits on top of the yogurt. (2 minutes)

  • 4.

    Sprinkle crushed walnuts over the fruit layer. (1 minute)

  • 5.

    Repeat the layers until all ingredients are used, finishing with a layer of fruit and walnuts on top. (3 minutes)

  • 6.

    Drizzle sunflower butter and honey over the top before serving. (1 minute)

    1 cup Greek yogurt (plain, low-fat)

  • 2.

    1 cup cottage cheese (low-fat)

  • 3.

    1 cup mixed fresh fruits (strawberries, blueberries, peaches, bananas)

  • 4.

    1/2 cup crushed walnuts

  • 5.

    2 tablespoons sunflower butter (no added sugar)

  • 6.

    1 tablespoon honey (optional, adjust to taste)
