Instructions
1.
In a medium bowl, combine the Greek yogurt and vanilla extract (if using). Mix well until smooth.
2.
In serving glasses or bowls, layer the yogurt mixture, followed by a layer of blueberries.
3.
Sprinkle chia seeds over the blueberries, then repeat the layers until all ingredients are used.
4.
Drizzle honey on top if desired, and serve immediately or refrigerate for up to 2 hours before serving.
