Instructions
1.
Preheat your oven to 375°F (190°C).
2.
In a mixing bowl, combine the egg whites, shredded Swiss cheese, diced ham, whole wheat flour, baking powder, salt, and pepper. Mix until well combined.
3.
If using, fold in the chopped spinach for added fiber.
4.
Grease a muffin tin or line it with silicone molds.
5.
Spoon the mixture evenly into the muffin tin, filling each cup about 3/4 full.
6.
Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and a toothpick inserted comes out clean.
7.
Allow to cool slightly before removing from the tin. Serve warm.
