Healthy High Protein Banana Bread Recipe

“So today I got up early to make some banana bread. I did a bit of experimenting swapping out the usual two cups of all-purpose flour for one cup of flour and about a cup and a half of shredded coconut. I also threw in a cup of cottage cheese to boost the protein. Surprisingly it turned out really good! I flavored it with lots of vanillatwo tablespoonsplus some almond extract and cinnamon. Of course I added ripe bananas and a couple of eggs. The result? A light filling banana-coconut-cottage cheese bread that tasted amazing. This was my first attempt but definitely not my last! To round out breakfast I had two eggs and two strips of turkey bacon for some extra protein. Its going to be a busy day so I wanted to make sure I got enough lean protein in the morning to keep me going and prevent snacking. Honestly ever since Ive increased my protein intake I dont even feel the need to snack much. If I do Ill just have a little cranberry nut mix or maybe a piece of fruit like a peach and that keeps me satisfied. Anyway this mornings banana bread was quickjust needed an extra 30 minutes to get it in the oven before everyone was up and starting their day. Super delicious and so rewarding. Lately Ive noticed a real shift in my mindset. I used to think I had no time to get anything done but now I see that with a bit of planning and intention most things are possible. Its nice to move from that scarcity mindset to a more positive everythings achievable mindset. I guess the desire was always there I just didnt realize how much time I actually had. Looking forward to lunch and dinner later and maybe even squeezing in an evening walk. Its becoming quite a tradition especially since my little one loves going out on his bike after dinner. That definitely keeps me motivated too!”

Instructions
1.
Preheat your oven to 350°F (175°C).
2.
In a large bowl, mix together the flour, shredded coconut, baking powder, baking soda, cinnamon, and salt.
3.
In another bowl, combine the mashed bananas, cottage cheese, eggs, vanilla extract, and almond extract until smooth.
4.
Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
5.
Pour the batter into a greased loaf pan and smooth the top.
6.
Bake for 30 minutes or until a toothpick inserted in the center comes out clean.
7.
Let it cool for 10 minutes before slicing.
