Instructions
1.
1. In a large bowl, whisk together the egg whites, salt, and pepper until well combined.

2. Heat a non-stick skillet over medium heat and lightly spray with olive oil if desired.
3.
3. Pour the egg whites into the skillet and cook for about 2-3 minutes until they start to set.
4.
4. Add the chopped spinach and diced tomatoes on top of the egg whites, then sprinkle with feta cheese.
5.
5. Cover the skillet and cook for an additional 3-4 minutes until the egg whites are fully cooked and the spinach is wilted.
6.
6. Serve hot with a dollop of Greek yogurt on the side.
