Instructions

1. In a non-stick skillet, cook the ground turkey over medium heat until browned, about 5 minutes.

2. Add sliced mushrooms and spinach to the skillet, cooking until the spinach wilts, about 2-3 minutes.

3. In a bowl, whisk together the eggs and egg whites. Pour the mixture into the skillet with the turkey and veggies.
