Instructions

  • 1.

    In a bowl, whisk together the eggs, almond milk, vanilla extract, and cinnamon until well combined (about 2 minutes).

    Heat a non-stick skillet over medium heat and lightly coat with cooking spray.

    Dip each half of the English muffin into the egg mixture, allowing it to soak for a few seconds on each side.

    Place the soaked muffins in the skillet and cook for about 3-4 minutes on each side, or until golden brown.

    Spread the peanut butter on top of the cooked French toast and add fresh fruit as a topping.
