Instructions

  • 1.

    In a medium saucepan, bring 4 cups of water or almond milk to a boil (about 5 minutes).

  • 2.

    Add 2 cups of gluten-free rolled oats and 1 teaspoon of cinnamon. Stir well and reduce heat to low. Cook for about 5 minutes, stirring occasionally.

  • 3.

    While the oats are cooking, crack 4 large eggs into a bowl, season with salt and pepper, and whisk until well combined.

  • 4.

    In a non-stick skillet, scramble the eggs over medium heat until fully cooked (about 3-4 minutes).

  • 5.

    Once the oats are cooked, remove from heat and stir in honey or maple syrup if desired.

  • 6.

    Serve the oatmeal topped with scrambled eggs for a balanced breakfast.
