Amazing great way to start off the day! Your breakfast has a good mix of lean protein and fiber-rich foods

Instructions

  • 1.

    In a medium saucepan, bring water or almond milk to a boil. (5 minutes)

  • 2.

    Add rolled oats and reduce heat to low. Cook for about 5 minutes, stirring occasionally until creamy. (5 minutes)

  • 3.

    In a separate pan, scramble the eggs over medium heat until fully cooked. (3-4 minutes)

  • 4.

    Add black beans, onions, bell peppers, and corn to the scrambled eggs. Cook until vegetables are tender. (3-4 minutes)

  • 5.

    Stir in pico de gallo and hot sauce to the egg mixture. (1 minute)

  • 6.

    Serve the oatmeal in bowls, topped with PB2, chopped pecans, and the egg mixture on the side.

    1 cup rolled oats

    2 cups water or unsweetened almond milk

  • 3.

    1/4 cup PB2 powdered peanut butter

  • 4.

    1/2 cup pecans, chopped

  • 5.

    4 large eggs

  • 6.

    1/2 cup black beans, rinsed and drained

  • 7.

    1/2 cup diced onions

  • 8.

    1/2 cup diced bell peppers

  • 9.

    1/2 cup corn (fresh or frozen)

  • 10.

    1/2 cup pico de gallo

  • 11.

    1/4 cup pickled onions

  • 12.

    Hot sauce to taste
