Nice way to start the day with a balance of protein and healthy carbs

Instructions

  • 1.

    In a medium saucepan, combine the gluten-free oats, water (or almond milk), and cinnamon. Bring to a boil over medium heat (about 3-4 minutes).

    Once boiling, reduce heat to low and simmer for 5 minutes, stirring occasionally until the oats are cooked and creamy.

  • 3.

    While the oats are cooking, whisk together the eggs and egg whites in a bowl. Season with salt and pepper.

  • 4.

    In a non-stick skillet, cook the egg mixture over medium heat, stirring gently until scrambled and fully cooked (about 3-4 minutes).

  • 5.

    Serve the oatmeal topped with the scrambled eggs. Enjoy your high protein oats!
