Instructions

  • 1.

    In a medium saucepan, bring the water or almond milk to a boil over medium heat (about 5 minutes).

  • 2.

    Add the rolled oats and flaxseed meal to the boiling liquid, stirring well. Reduce heat to low and simmer for about 10 minutes, stirring occasionally until the oats are cooked and creamy.

  • 3.

    While the oats are cooking, heat a non-stick skillet over medium heat. Crack the eggs into the skillet and cook to your preference (scrambled or fried).

  • 4.

    Once the oats are ready, stir in the blueberries, cinnamon, and vanilla extract. Cook for an additional 2 minutes.

  • 5.

    Serve the oatmeal in bowls, topped with chopped almonds and a cooked egg on the side.
