Instructions

  • 1.

    In a small pot, bring water or almond milk to a boil.

  • 2.

    Add the gluten-free oatmeal and cinnamon, reduce heat, and simmer for about 5 minutes until the oats are cooked.

  • 3.

    While the oats are cooking, whisk together the whole eggs and egg whites in a bowl.

  • 4.

    In a non-stick skillet, scramble the eggs over medium heat until fully cooked, about 3-4 minutes.

  • 5.

    Once the oats are ready, serve them in a bowl topped with the scrambled eggs.

  • 6.

    Season with salt and pepper to taste.
