Great combo and both great choices for breakfast!

Instructions

  • 1.

    In a medium saucepan, combine rolled oats and almond milk. Bring to a boil over medium heat, then reduce to a simmer. Cook for about 5 minutes, stirring occasionally, until the oats are creamy (about 5-7 minutes).

    Stir in the protein powder and cinnamon (if using) until well combined. Remove from heat and let it sit for a minute.

  • 3.

    While the oats are cooking, heat a non-stick skillet over medium heat. Crack the eggs into the skillet and fry until the whites are set and the yolks are cooked to your liking (about 3-4 minutes).

  • 4.

    Serve the oatmeal in bowls, topped with blueberries, almonds, and a fried egg on the side. Drizzle with a little sweetener if desired.
