Leftover chicken oatmeal blueberries almonds. 1/2 C 2% milk I ate the chicken first and then ate about 2/3 of the oatmeal. Stopped because I was full Eating chicken for breakfast still feels weird but I had lots of leftovers and it sounded good this morning!

Nothing wrong with eating chicken for breakfast! Great protein-rich start to the day - Im guessing it kept you full for a while!

Instructions

  • 1.

    In a medium saucepan, combine the rolled oats and 2 cups of milk. Bring to a boil over medium heat, stirring occasionally. (5 minutes)

  • 2.

    Once boiling, reduce heat to low and simmer for about 5 minutes, or until the oats are cooked and creamy. Stir frequently to prevent sticking.

  • 3.

    While the oats are cooking, prepare the chicken by shredding it into bite-sized pieces.

  • 4.

    Once the oats are ready, remove from heat and stir in the shredded chicken, blueberries, and honey (if using). Mix well to combine. (2 minutes)

  • 5.

    Serve the oatmeal in bowls, topped with chopped almonds for added crunch and nutrition.
