Instructions
1.
In a medium saucepan, bring water or almond milk to a boil (about 5 minutes).
2.
Add the rolled oats and diced potatoes, reduce heat to medium, and cook for 10 minutes, stirring occasionally.
3.
Stir in the protein powder and chopped spinach, cooking for an additional 2-3 minutes until the spinach wilts.
4.
Remove from heat and fold in the blueberries.
5.
Serve warm, adding salt and pepper to taste.
