Instructions

  • 1.

    In a medium saucepan, combine rolled oats and water or almond milk. Bring to a boil over medium heat (about 5 minutes).

    Reduce heat to low and stir in flaxseed meal, blueberries, and cinnamon. Cook for an additional 5-7 minutes until the oats are creamy and thick.

  • 3.

    While the oats are cooking, heat a non-stick skillet over medium heat. Crack the eggs into the skillet and cook to your desired doneness (about 3-4 minutes for sunny-side up).

  • 4.

    Once the oats are ready, remove from heat and stir in vanilla extract if using. Serve the oatmeal in bowls, topped with chopped almonds and a splash of 2% milk if desired.

  • 5.

    Top each bowl with a cooked egg for added protein and enjoy!
