Instructions

    In a medium saucepan, combine rolled oats and almond milk. Bring to a boil over medium heat, then reduce to a simmer. Cook for about 5 minutes, stirring occasionally, until the oats are soft and creamy.

    While the oats are cooking, whisk the eggs in a bowl. In a non-stick skillet, scramble the eggs over medium heat until fully cooked, about 3-4 minutes.

    Once the oats are cooked, remove from heat and stir in Greek yogurt, honey, and cinnamon if using. Mix well until creamy.

    Serve the oats in bowls, topped with sliced banana, blueberries, and scrambled eggs. Add spinach on top for extra fiber if desired.
