Instructions

  • 1.

    In a medium saucepan, combine rolled oats and low-fat or non-dairy milk. Bring to a boil over medium heat, stirring occasionally. (5 minutes)

  • 2.

    Once boiling, reduce heat to low and add blueberries. Cook for an additional 5 minutes, stirring occasionally until the oats are creamy. (5 minutes)

  • 3.

    In a separate pan, heat olive oil over medium heat. Add diced onions and sauté until translucent. (3 minutes)

  • 4.

    Add chopped spinach to the onions and cook until wilted. (2 minutes)

  • 5.

    In a bowl, whisk the eggs and pour them into the spinach and onion mixture. Cook until the eggs are set, stirring occasionally. (3-4 minutes)

  • 6.

    Serve the oatmeal topped with the spinach and egg mixture, and sprinkle with cheddar cheese if desired.
