Instructions
1.
In a mixing bowl, combine oat flour, protein powder, baking powder, and a pinch of salt. Mix well.

In another bowl, whisk together the eggs, almond milk, and vanilla extract until smooth.

Pour the wet ingredients into the dry ingredients and stir until just combined. Let the batter sit for 5 minutes.

Preheat your waffle maker according to the manufacturer's instructions.

Spray the waffle maker with a light coating of cooking spray.
6.
Pour the batter into the preheated waffle maker and cook according to the manufacturer's instructions, usually about 5 minutes, until golden brown.
7.
Serve the waffles warm with a drizzle of pure maple syrup and a slice of cheese if desired.
