Instructions

1. Begin by poaching the eggs. Bring a pot of water to a gentle simmer, then crack the eggs into the water and cook for about 3-4 minutes until the whites are set but the yolks remain runny. Remove and set aside.

2. In a mixing bowl, combine the Greek yogurt, diced tomatoes, and a pinch of salt and pepper. Mix well until combined.

3. In a non-stick skillet, add the low-calorie cheese and allow it to melt over low heat, stirring occasionally for about 2-3 minutes.

4. Once the cheese is melted, gently fold in the poached eggs, ensuring they are coated with the cheese.
