Instructions

  • 1.

    In a large bowl, combine Greek yogurt, flaxseed, chopped almonds, and blackberries. Mix well and set aside.

  • 2.

    In a skillet over medium heat, add a splash of water or a non-stick spray.

  • 3.

    Add chopped spinach, cherry tomatoes, and sliced red chili peppers to the skillet. Sauté for about 2-3 minutes until the spinach is wilted.

  • 4.

    Crack the eggs into the skillet, season with salt and pepper, and scramble everything together until the eggs are fully cooked (about 2 minutes).

  • 5.

    Serve the yogurt mixture in bowls topped with the scrambled egg and vegetable mixture.
