Instructions

In a bowl, whisk the eggs with salt and pepper until well combined (2 minutes).

Heat a non-stick skillet over medium heat and pour in the egg mixture (2 minutes).

Cook the eggs, stirring gently until they are scrambled and cooked through (3-4 minutes).
4.
If using spinach, add it to the skillet in the last minute of cooking to wilt (1 minute).
5.
Serve the scrambled eggs alongside the Greek yogurt in bowls.
